INGREDIENTSKey Lime cookies:

  • 1 cup Butter Unsalted softened
  • 1½ cup Sugar Granulated
  • 1 Egg Large
  • 1 tsp Vanilla extract
  • ¼ tsp Lime extract
  • 2 tsp Lime juice
  • 1½ tbsp Lime zest
  • Neon green gel food coloring Few drops

  • 2¾ cups Flour All-purpose
  • ⅓ cup Coconut Shredded
  • ½ tsp Baking powder
  • 1 tsp Baking soda
  • 1 cup Sugar Additional granulated for rolling cookie dough balls


  1. In a mixing bowl, cream together butter and sugar until light and fluffy.
  2. Mix in the egg, vanilla extract, lime extract, lime juice, lime zest, gel coloring until smooth.
  3. In a separate bowl, whisk together the flour, shredded coconut, baking powder, baking soda.
  4. Dump this dry mixture into the wet mixture and mix until just combined.
  5. Scoop out small portions of the dough and shape them into balls. Roll them in a plate filled with granulated sugar. Place them on a cookie tray, lined with parchment paper and chill the tray for 15-20 minutes.
  6. Then, bake at 350 degrees for about 15 minutes or until the edges are firm and golden brown.
  7. Allow these cookies to cool down and enjoy!
